Dale Talde's passion for cooking began at a young age in his native Chicago where he learned to prepare meals alongside his mother in the kitchen. The proud son of Filipino immigrants, he grew up immersed in
his family's cultural heritage while also enjoying the life of a typical American kid. Dale applies this distinct Asian-American experience to the menu of his eponymous restaurant, TALDE, located in the Brooklyn's thriving Park Slope neighborhood. Dale opened TALDE, his first restaurant as chef/partner, in January 2012, and it quickly became a hit with diners and critics alike. In August 2012, he and his partners, the Three Kings of Kings County, David Massoni and John Bush launched Pork Slope, a Brooklyn roadhouse serving his take on classic American bar food. In October 2012, he took over the kitchen and became a partner in Massoni and Bush's first restaurant, Thistle Hill Tavern. In February
2015, Dale, John and David opened their second location of TALDE in Jersey City along with an Italian restaurant and caf, Carrino Provisions, with their friends and longtime Jersey City residents, Anthony
Carrino and John Colaneri of HGTV's "Kitchen Cousins," "Cousins on Call" and "Cousins Undercover." In Fall of 2015, the Three Kings of Kings County will open the third outpost of TALDE in Miami Beach at the Thompson Hotel.

What is your earliest memory involving food or wine?
My first food memory is a family vacation to San Francisco. We were in China Town walking down these foggy streets like out of a movie. We stepped into a Chinese restaurant with ducks and chicken and BBQ pork hanging in the window. when we sat down my parents said i could eat what ever i wanted, there were like 400 dishes, i fumbled through the menu and ordered congee, rice porridge, with roasted duck, and a scallion ginger relish. I ate a few bites but was super full eating everyone else's dim dum and meals.
If you've participated in the Festival before, what is your favorite SOBEWFF memory to date?
My favorite memory to date is when I was asked to play in a chef golf tournament with Jose Andres and on the 8 hole pulled my hybrid 3 iron and from about 170 yards out and over a water hazard put the ball about 5 feet from the hole. It was the only good shot all day.
If this is your first year participating in SOBEWFF, what are you most looking forward to?
This is not my first year participating.
If you could cook with anyone in the world, who would it be?
If i could cook with anyone in the world it would be with Elon Musk, I'd love to be around such a brilliant mind and show him a thing or two.
