Fernando Desa

Goya Foods, Inc.

As a member of La Gran Familia Goya, Chef Desa is primarily responsible for the research and development of new products and recipes for inclusion on www.goya.com and its related publications. In his capacity as Product Development Manager, Chef teams members of the Sales and Marketing departments to explore the usage of new products from Latin America and adapt them for Goya’s consumer markets. Following extensive research in Goya’s test kitchens as well as off-site demonstrations, he incorporates these products into signature recipes available to the public. Capturing the traditional tastes and methods that have been handed down through generations, Chef Desa works to retain the flavors that epitomize Latin American cuisine while incorporating new techniques that can be easily duplicated by the home chef. His ability to fully explore the potential of new products epitomizes the brand’s commitment to authenticity and refined Latin American cuisine. With an extensive product line of over 1,600 Latin American food items, Chef Desa strives to meet the expectations of Goya’s diverse client base by creating dishes that speak to their changing lifestyles and dietary needs. Fortunately, he brings a wealth of experience and a firm connection to Latin American culture to his position. A native of Mayagüez, Puerto Rico, Chef Fernando Desa is deeply rooted to culinary excellence and references his mothers’ expertise as a teacher of International Cuisine at the University of Puerto Rico as a primary inspiration for his pursuit of cooking as a career. After obtaining his degree in Culinary Arts from the prestigious Johnson & Wales University, Chef worked in highly-rated places in Puerto Rico like the Horned Dorsett Primavera Resort and in the Greenbrier Resort in the United States as well as other establishments. Prior to joining Goya Foods, Chef Desa further honed his talents as R&D Chef and Executive Sous Chef for Kettle Cuisine in Massachusetts where he served ably for over five years. At Kettle Cuisine he researched, developed and customized products for use in US and International chains and franchises. Chef Desa is a proud member of the IFT (Institute of Food Technologists), the American Culinary Federation, and the Research Chef Association. In his role as Executive Chef for Goya Foods, Desa draws upon his varied experiences in the culinary world by participating in televised appearances in the U.S. and Puerto Rico on behalf of the company such as NBC, ABC, Telemundo, Univision, and Radio Morning Shows. In addition, he has served as judge in various cooking competitions.
