Executive Chef Bill Bruening has been around the South Florida culinary scene for some time now. He first joined The Restaurant People (TRP) in September 2013 as sous chef for S3 on Fort Lauderdale beach, where he worked alongside TRP Executive Chef Peter Boulukos and S3 Executive Chef Chris Miracolo, prior to taking on the role of executive chef for TRP’s latest concept, Fork & Balls on Las Olas.

Growing up on Florida’s Gulf Coast, Bruening was inspired by the region’s abundant fresh fish and developed a passion for cooking with locally grown fare. During his 20 years of restaurant experience, he has worked with respected chefs including Johnny Earles, Erling Jensen, Dominique Maquet and TRP’s very own Executive Chef Boulukos. After honing his skills at venues including The James Beard House, New York and the Miner Family Vineyards, Napa Valley, Bruening returned to South Florida in 2006 to continue his culinary career. Prior to bringing his passion, creativity and culinary expertise to TRP, Bruening was the executive chef at the Sunfish Grill in Fort Lauderdale from 2009 to 2013, where he garnered critical acclaim for his culinary work and contributions.  

When he isn’t working, Bruening is a drummer and avid fisher in his spare time, and he enjoys cooking for and spending time with his wife, Deanna, with whom he currently resides in Fort Lauderdale.
